Inside Chinesology, Saito Chau’s Modern Exploration of Tang Dynasty Dining
Mira Dining’s new IFC Mall restaurant pairs refined Chinese gastronomy with a herbology-inspired cocktail programme to pay tribute to the “Golden Age of Imperial China.”

Hong Kong hospitality group Mira Dining is adding another jewel to its portfolio of acclaimed restaurants with Chinesology, a Chinese fine dining concept that exalts the innovative culinary developments of the ancient Tang dynasty. 

Veteran chef Saito Chau serves as the culinary director, shaping Chinesology’s approach. He leverages his experiences in the kitchens of Dim Sum Library, Cantonese grill John Anthony, and Northern Chinese restaurant Hutong to put forward a culinary concept that relies on four main pillars: presentation, concept, experience, and offerings.

His nine-course Flavours of Life degustation menu showcases technical prowess in appetisers like soft-shell prawn with salted egg and barley crisp and A5 Kagoshima Wagyu beef, served in a “crispy spoon” with fried pine nuts and lotus root; dishes like 20-head premium dried abalone in a secret sauce, Maotai-stewed chicken, and oolong tea-smoked chicken with osmanthus; and desserts like preserved plum mousse

Bar manager Fan Tsang referred to the 16-volume Compendium of Materia Medica to create his signature line of cocktails, a nod to the time-honoured teachings of traditional Chinese medicine. The Chinese Apothecary sees red wine simmered with a potent mixture of dried tangerine peel and herbs like chuanxiong and angelica for a piquant flavour sensation; the Tietini pairs a tieguanyin-flavoured gin with Lillet Blanc aromatised wine, agave syrup, and tonic water; and the Bamboo Punch blends a Chinese bamboo-based whisky with a house-made five-spice lemongrass cordial. Gin lovers will want to taste a sip of the Chinesology house gin, a sweet liquor of red dates, longan, and hawthorn that was developed in partnership with local distiller Fok Hing Gin.

Panoramic views of Victoria Harbour are part and parcel of the elegant experience, accentuated by traditional Chinese-inspired motifs, a contrasting melange of colours, and a mirrored ceiling design that echoes the textures and details of developed film.
