It’s true what they say—time flies when you’re having fun.
In the blink of an eye, the recently rebranded Upper House Hong Kong has reached its 16th anniversary. Naturally, a milestone like this does not go uncelebrated, and what better way to mark the occasion than with a one-night-only feast presented by one of Asia’s finest?


On 7 November 2025, Salisterra at Upper House Hong Kong will welcome chef Jordy Navarra of Manila’s one-Michelin-star Toyo Eatery, who will join hands with Ricardo Chaneton, Salisterra’s culinary advisor, to create culinary magic that bridges the Mediterranean and the Philippines. Both gastronomic traditions are big on shared dining experiences, and for the chefs, this collaboration represents a renewed meeting of minds—Navarra and Chaneton partnered up for a stint at Mono two years ago, which we can assume went well enough to bring about a sequel.
Toyo Eatery, its name derived from the Tagalog word for soy sauce, is dedicated to the appreciation and continuation of Filipino culinary heritage. It also stands as a champion of sustainability, with a strong focus on “closing loops,” sourcing produce locally, and supporting small artisan communities in the Philippines. One of the signature experiences at this acclaimed restaurant in Makati is the kamayan tasting menu, a direct tribute to the Filipino communal dining tradition of enjoying a shared meal off a banana leaf with your hands.
After the meal, the party continues in the Green Room, where the award-winning Ethan Liu of CMYK in Changsha, ranked No. 16 on Asia’s 50 Best Bars 2025, will be putting in a guest shift. For a limited time only, to commemorate the unified brand relaunch of Upper House, the Green Room will also be serving signature cocktails from the Chengdu and Shanghai properties.
