A few moons ago, Morris Chang of Penicillin fame was voted by industry peers as Hong Kong and Macau’s Most Sustainable Bartender with his winning cocktail, Vice Versa. Of course, we had to mosey down to his hidden-in-plain-sight bar (good luck finding the place on Hollywood Road below Amber Lodge) for a sip and a sample of the drink that made him stand out among highly competitive cocktail-making veterans.
