The guys behind the counter at The Savory Project like to put an original spin on concoctions with names to befuddle readers—Thai Beef Salad (it’s a drink), Papaya Fire (again, not the ripe fruit set alight, but an actual drink), and Pepper Corn. You get the gist; ingredients include charred corn husk, cumin, peppers, tomato, mezcal, and even a dash of MSG. And no, it’s not a soup. Trust us.

Gari Gari

  • Passion fruit
  • Japanese whiskey
  • Ponzu
  • Malic acid
  • Soda water 
  • Gari

Add all ingredients to a tall glass, add ice, and garnish with a slice of gari (pickled ginger). Its presentation is slick, and the taste is everything.
